Nestled
against the red rocks in the foothills overlooking Denver, stands the
Fort, a full-sized adobe replica of Bent’s Fort, Colorado’s first
fur-trading post. Step through the courtyard into an award-winning
white-tablecloth restaurant that serves more buffalo than any other in the
world.
Besides buffalo steak, which has less cholesterol and fat than chicken, feast on specialties such as ostrich, ox or elk with huckleberry sauce. Hearty mesquite broiled salmon, chicken, marvelous Colorado prime beef and vegetarian dishes abound. A large wine cellar offers unusually low prices for excellent bottles. The Fort’s unique fare and old-fashioned hospitality has earned national recognition in Bon Appetit, Gourmet, Esquire, and the New York Times. The Fort also received the first Governor’s Award of Excellence, four stars from both local newspapers and was host to the Summit of the Eight in Summer 1997.
